CHEMEX

Ingredients:

  • 50-60 g of coffee beans.
  • Purified or bottled water.
  • One 6-cup Chemex.
  • One electric kettle or goose neck kettle*.
  • One dessert spoon.
  • Digital or analog scale
  • Stopwatch
  • Coffee mug

Preparation:

  • Boil the water twice for a real brew (you will need about 1,200-1,400 grams of water for 6 cups of coffee).
  • Grind around 50-60 grams of coffee in a French press
  • Insert the filter of the Chemex.
  • Pour some hot water to clean the filter and warm up the glass and drain it.
  • Pour the ground coffee into the filter and shake it gently. This will flatten the area where you will pour the water and give you space.
  • Pour the hot water directly from the electric or goose neck kettle, if you have one, starting from the center and spreading out to the edges.
  • Wait 30 - 45 seconds for the aromas in the coffee to be released.
  • Then continue pouring the rest of the water in a slow, circular motion. Near the end of the brewing time, pour water around the edges to ensure that the coffee is fully mixed with the water.
  • Total brewing time will take approximately 4:00 minutes.
